Pollo all 'Arrabbiata
fiery chicken with tomatoes
Serves 4
a
Organic Chicken (over 1 kg)
50 g
lard
4 tablespoonsolive oil (the best is inside me)
amedium onion, finely chopped
8 garlic cloves, peeled
150 ml dry red wine1-2
pepperoncini (ie which are worthy of the name!)
600 g ripe tomatoes, finely chopped2 tablespoons tomato paste
2 tablespoons
parsley, finely chopped
salt / pepper
The same recipe can be just as good rabbit or prepare wood pigeon.
pour the wine and let evaporate somewhat. The chili, tomatoes and tomato paste add. Lightly salt and bring to boil and simmer gently for 30-40 minutes in covered pot until meat is tender. Season
with salt and pepper, the parsley and serve. Tastes great with polenta.
