Sample Waiting Invitations

Pollo all 'Arrabbiata
fiery chicken with tomatoes

Serves 4


a

Organic Chicken (over 1 kg)

50 g

lard

4 tablespoons

olive oil (the best is inside me)

a

medium onion, finely chopped

8 garlic cloves, peeled

150 ml dry red wine

1-2

pepperoncini (ie which are worthy of the name!)

600 g ripe tomatoes, finely chopped

2 tablespoons tomato paste

2 tablespoons

parsley, finely chopped

salt / pepper

The same recipe can be just as good rabbit or prepare wood pigeon.


divide the chicken and cut into medium sized pieces. Lard and Heat olive oil in a large heavy pot or casserole. The chicken with the onion in the whole cloves of garlic fry brown all around.


pour the wine and let evaporate somewhat. The chili, tomatoes and tomato paste add. Lightly salt and bring to boil and simmer gently for 30-40 minutes in covered pot until meat is tender. Season

with salt and pepper, the parsley and serve. Tastes great with polenta.
